Pickled Peaches
Sound weird? They aren't. They're spicy, sweet, and tangy. Pickled peaches are delicious. Honestly. Jam is great, but this pickled fruit thing is really intriguing me.
We made some pickled peaches recently, thanks to Food In Jars' recipe for Gingery Pickled Peaches. (It occurs to me that if you hate ginger, you could substitute another flavor.)
We followed the recipe exactly. Perhaps we followed it too exactly, though, because the peach skins were nowhere close to ready to come off after the allotted time. I recommend that if you try this, you don't cool the hot water until you test-peel a peach slice and it works.
We had left-over pickling liquid. It was so good that I put it in a pot, added some more sugar, and boiled it until it became a thick syrup. It was delicious drizzled on yogurt.
